Apple and Passionfruit Teacup Crumbles

These fruity crumbles made in teacups or ramekins are irresistible. You can also make this in a baking dish. Apple concentrate is available in health food stores.

Ingredients

  • 6 Granny Smith apples
  • 1 cup apple concentrate or 2 tablespoons sugar in ¼ cup water
  • 6 passionfruit, halved and flesh scooped out
  • 2/3 cup nuts, roughly chopped (hazelnuts, almonds, macadamias etc)
  • 1 tablespoon sesame seeds
  • 1 teaspoon cinnamon
  • 75g butter, melted
  • 1/3 cup maple syrup
  • ½ cup rolled oats

Method

Preheat the oven to 180 degrees Celsius. Peel, core and thinly slice the apples. Place apples in a saucepan with the apple concentrate. Cover and gently cook over low heat for 8-10 minutes or until soft. Stir through the passionfruit pulp and spoon into 6 teacups or ramekins.

Combine the chopped nuts, sesame seeds, cinnamon, melted butter, maple syrup and rolled oats. Sprinkle over the apple and passionfruit mixture in the teacups. Place on a baking tray and bake for 20 minutes or until golden and the crumble is cooked. Serves 6.
