Coconut Panna Cotta with Berry Coulis

One of the most requested recipes by our Residential Program participants.

Ingredients

  • 500mls of Coconut Cream or Coconut Milk
  • 10g of Gelatine
  • 1tsp Vanilla extract
  • ½ tsp stevia granulated sweetener
  • 1 teabag of your favourite tea (we use matcha)
  • 500g of your favourite frozen berries (puree half for the coulis)
  • 2 tsp of toasted Coconut
  • 2 tsp Hemp Seeds

Method

  1. In a pot add the coconut cream or milk, vanilla and stevia at room temperature. Sprinkle in gelatine whist gently whisking and leave to sit for 2 minutes to absorb the liquid. Then add the teabag.
  2. Place pot with coconut cream mixture over medium heat on the stove, bring to a simmer, stirring constantly. Immediately remove from the heat – do not allow mixture to boil. Strain, removing the teabag.
  3. Allow to cool slightly before pouring into a 600ml mould or divide evenly into five 120ml ramekins or moulds.
  4. Place into a refrigerator and leave for 4 hours, or until set.
  5. Serve with coulis, whole berries and sprinkle with toasted coconut and hemp seeds.

Funding Options for Residential Programs

Self-Funding

Quest subsidises all privately or self-funded places to ensure the cost of our programs remains affordable to individuals. This allows us to reduce the fee from $4,400 to $2,800.

$2,200 Shared room (Early bird* $2,100 – must be paid 30 days in advance)
$2,800 Single room (Early bird* $2,700 – must be paid 30 days in advance)

Fees effective 1 July 2023.

Subsidies

Through generous grants, donations and fundraising, additional subsidies are available for a range of circumstances and anyone experiencing financial stress will be considered.

NDIS

Quest is a registered NDIS Provider. Residential Programs can be funded through plan-managed and self-managed NDIS plans.

DVA

We work with Department of Veteran Affairs (DVA) White Card or Gold Card holders to make applications to the DVA Health Approvals Board.

Worker’s Comp Insurance

Residential programs can be covered by workers compensation insurance on a case-by-case basis.
