This fresh and wholesome pesto recipe is so versatile and easy to make. It can be served on bread, baked fish, chicken or even used in pasta.
- 200g fresh Basil
- 100g fresh Spinach (either Baby Spinach or just the leaves of English Spinach)
- 100g of raw Macadamia Nuts
- 100g of raw Cashew Nuts
- 200g Semi dried tomatoes with oil
- 1 tsp of Vegetable stock powder (or Vegeta)
1.Place all ingredients into a food processor and blitz on high until a paste-like consistency is formed.
Store any leftovers in an ice cube tray. Easy to take out and use at a later time!
