Whole Orange Cake

Aug 14, 2023 | Recipes

Our Quest for Life chef, Katie, has this special recipe to share – a totally divine cake made with whole fresh oranges – yes, rind and all!

A delicious moist cake with a beautiful fresh orange flavour. It’s a terrific easy cake for gatherings. Made with only 5 ingredients – oranges, almond meal, sugar, eggs and baking powder, its gluten-free and lactose-free.

Using the whole orange gives an incredible flavour. Boiling the oranges removes the bitterness of the pith as well as softening the oranges to make them “jammy”.

It’s a firm favourite at Quest.

Ingredients

2 medium oranges

1 and 1/4 tsp baking powder

6 large eggs

1 and 1/4 cups white sugar

2 and 3/4 cups almond meal

Method

  1. Boil oranges whole for 10 minutes, let drain and repeat this boiling process in 3 x 10-minute intervals. Once done, drain and let cool.
  2. Once cool, roughly slice or dice the oranges and mix in a blender until it becomes like jam.
  3. Add baking powder and eggs, mix thoroughly in a blender, then add the remaining dry ingredients (sugar and almond meal). If it won’t fit in a blender, you can mix this through by hand.
  4. Once mixed, put in an oiled (or lightly sprayed) cake pan. Bake for 60 minutes at 160 degrees fan-forced oven, or 180 degrees non-fan-forced oven.
