Pumpkin Soup with Pesto Cheese Bread

Warm up with this delicious Pumpkin Soup and grilled Pesto Cheese Bread recipe.

Ingredients

Pumpkin Soup

  • 1 large diced Leek (washed well)
  • 800g peeled and deseeded Pumpkin cut evenly into chunks (Choose a sweet pumpkin variety either a Butternutt or Jap)
  • 2L of Vegetable stock
  • 200g Sweet Potato peeled and cut into chunks
  • 400mls of good quality Coconut Cream or Coconut Milk

Grilled Basil Pesto & Cheese Bread

  • Your favourite sliced bread (Sourdough is great) 
  • Basil Pesto – Recipe can be found here  
  • Your favourite firm Cheese

Method

Pumpkin Soup

  1. Place the Leek, Pumpkin, Vegetable stock and Sweet Potato into a pot and bring it to boil, then simmer until very tender.
  2. Add the Coconut Milk/Cream and blitz with a stick blender
  3. Serve with Grilled Pesto/Cheese bread

Grilled Basil Pesto & Cheese Bread

  1. Spread Pesto generously over sliced bread
  2. Sprinkle with your favourite firm cheese
  3. Pop it into the grill until lightly browned

Self-Funding

Quest subsidises all privately or self-funded places to ensure the cost of our programs remains affordable to individuals. This allows us to reduce the fee from $4,400 to $2,800.

$2,200 Shared room (Early bird* $2,100 – must be paid 30 days in advance)
$2,800 Single room (Early bird* $2,700 – must be paid 30 days in advance)

Fees effective 1 July 2023.

Subsidies

Through generous grants, donations and fundraising, additional subsidies are available for a range of circumstances and anyone experiencing financial stress will be considered.

NDIS

Quest is a registered NDIS Provider. Residential Programs can be funded through plan-managed and self-managed NDIS plans.

DVA

We work with Department of Veteran Affairs (DVA) White Card or Gold Card holders to make applications to the DVA Health Approvals Board.

Worker’s Comp Insurance

Residential programs can be covered by workers compensation insurance on a case-by-case basis.
