Lavender or Rosemary Cookies

These are a lovely, fragrant and special treat to make for Mum on Mother’s Day. Choose whether you prefer rosemary or lavender, make a nice hot cup of tea and enjoy them with Mum.

Ingredients

  • 125 grams unsalted butter
  • 1/3 cup soft brown or raw sugar
  • 1 egg
  • ¾ cup self-raising flour, sifted
  • ½ cup plain flour, sifted
  • 2 tsps custard powder
  • 1-2 tsps fresh rosemary leaves, finely chopped
    OR
    1-2 teaspoons dried English lavender (check that there are no additives), removed from stem and chopped

Method

  1. Place butter and sugar in a food processor and blend until creamy
  2. Add the egg and pulse until combined
  3. Add the self-raising flour, plain flour, custard powder and either rosemary or lavender and pulse until combined
  4. Place in the fridge for 30 minutes
  5. Preheat the oven to 200⁰C
  6. Form the mixture into small balls (about 2 teaspoons of mixture), and place on a baking tray lined with baking paper.
  7. Press down with a fork to form a biscuit and bake for 12-15minutes or until golden.
  8. Leave to cool on the baking tray – if you can resist eating them warm – and then store in an airtight container or freeze for later.
